Descamex's Mountain Water decaffeinated process has earned many organic certifications and is a system that safely removes caffeine without using any chemical solvents. They accept 5,000kg of coffee per batch and are able to finish the organically certified raw materials to the final product while keeping the production history transparent, making them one of the few organic decaffeinated factories in the world. This time, they decaffeinated coffee produced by 79 farms in "Product Conservacion El Triunfo" in Chiapas, Mexico. This is an unprecedented organic JAS decaffeinated coffee that has a clean liquid quality typical of Chiapas, Mexico, and a long aftertaste.
How to make organic decaffeinated coffee
1. The raw materials are temporarily stored in a separate area to prevent contact with other coffee.
2. The caffeine content is measured in advance in 5,000 kg batches and prepared for extraction.
3. The equipment, including the decaffeinated tanks, is air-cleaned and steam-cleaned to ensure that it does not come into contact with other coffee.
4. It is sent to the first tank and sprayed with steam jets under temperature and pressure control.
5. Place in warm water to promote caffeine extraction.
6. Transfer to saturated aqueous solution to remove caffeine. At this time, the pressure is set under specific conditions.
7. The product is dried to a moisture content of 11-12% and then packed for export.
