The Chandra Hills are part of the Western Ghats and are said to be a treasure trove of biodiversity, with approximately 5,000 confirmed species of flowering plants and hundreds of animals living there.

The coffee is grown amongst shade trees that are unique to this region; indigenous trees are about 10 metres tall and only have leaves near the tops, while legume plants grow their leaves midway up the trunks, providing double shade.

These two layers of shade prevent soil erosion from the strong seasonal rains and protect the soil from the sudden rise in daytime temperature that is typical of this area, which is essential for the growth of Indian coffee.

■Ganesha Ganesha is loved by the people of India as the god of fertility, wisdom, and prosperity in business.

The abundantly ripe coffee cherries of Khmer Godet have been refined to high quality through the efforts of the local people and the wisdom nurtured over more than 100 years of history, and were named Ganesha with the hope that they would reach people in Japan across the ocean and bring prosperity to the business.

■Khmer Godet Khmer Godet is the fortune of the Kerachandra group (see below).

It is a historic plantation run by a company that began operations in 1921 under British colonial rule.

Khmer Gode is divided into three districts, Khmer Gode, Chandrapur and Jagrimane, which are the collective names for the farmlands. This time, we will introduce coffee from Khmer Gode.

The three areas together cover an area of approximately 1,492 acres (6 square kilometers). The area has a long history dating back to 1921, and has been producing coffee since the days of British colonial rule, continuing to accumulate cultivation techniques.

High quality Indian Arabica coffee is grown at an average altitude of 1100-1200m. It is located on the steep slopes of Mt. Mullayanagiri (1925m), the highest peak in Karnataka, at an altitude of 1100-1400m, which is one of the few high altitudes in India. It is a jungle-like place close to undeveloped land with limited transportation, so only a limited amount of coffee can be grown.

The coffee is cultivated in an environment close to that of a natural forest, not on a large-scale uniform plantation. Specifically, the coffee grows in the natural canopy of the shade of indigenous Indian fig trees such as basili, goli, and garrige, and fruit-bearing trees such as jackfruit. The site is rich in wildlife and birds, including bison, wild rabbits, and peacocks. Bengal tigers sometimes appear to prey on these animals.

The coffee produced in Khmer Godeh has a different flavor from other Indian Arabica coffees, and is characterized by the characteristic and high-quality terroir of India, such as nuts, chocolate, and caramel, as well as a fresh aroma like lemongrass. In order to make the most of the aroma, a lot of time and effort is spent on the coffee from the harvest.

During harvest, the coffee cherries are picked by skilled artisans who can determine their ripeness. They are then washed and sorted by gravity, after which those that are not ripe enough are further removed by hand. They are then dried in small lots on drying racks in greenhouses, with their moisture levels measured, to ensure that they are not affected by India's unique weather conditions, which are full of sudden downpours.

Most of the best batches made in this way are from Europe. For coffee makers in the US and American specialty coffee makers It is traded at high prices in Asia and is rarely distributed in Asia, including Japan.
